Healthier Peanut Butter Cookie Dough Balls

You are going to want to combine everything in the mixing bowl together, except for the coconut flour and chocolate chips. When you get everything else combined the texture is going to be very sticky. Once all of that is combined, then you are going to add in the coconut flour. Coconut flour makes the consistency dry so really add it in slowly and get to the consistency that you like.

Once you have the consistency you like with the coconut flour then fold in your chocolate chips. Really depending on what you like, you can use normal size or mini chocolate chips. I love using a combination of both that way you can really get chocolate in each bite! If you couldn’t tell I am a chocolate lover so I like to have some in every bite! Go ahead and start rolling them into balls once you have the peanut butter cookie dough and the perfect amount of chocolate chips in it!

We usually roll our balls on the smaller size that way they are the perfect size for the kid’s hands. We also roll them a little smaller that way they are easy to grab on the go and can be eaten quickly. The rolling process definitely takes the longest to make these so grab a kid and get to rolling! Make sure to store them in an air-tight container in the fridge to help keep them fresh for weeks.
