Patriotic Popsicles

If you are anything like us you are feeling a little bummed about so many fun summer festivities being canceled. We always look forward to our town’s Fourth of July celebration but unfortunately this year for the first time in over 100 years I believe it has been canceled. We will of course still be celebrating and I’m looking for lots of fun ways to celebrate at home with our kiddos and I thought these live sweet version of red, white, and blue popsicles would make a fun festive treat for the whole family!! My kids love how these taste and of course think the layers are super fun!!

Ingredients:

Strawberry Base:

  • 2 cups of fresh or frozen strawberries
  • 1/3 cup granulated sugar
  • 1 cup of plain yogurt of choice(I use while fat Greek)
  • 1/3 cup milk
  • 2 teaspoons fresh lemon juice

Blueberry Base:

  • 3 cups fresh or frozen blueberries
  • ½ cup granulated sugar
  • 1 cup of plain yogurt of choice
  • ½ cup milk

Lemon Base:

  • ¾ cup fresh lemon juice
  • ½ cup granulated sugar
  • 2 tablespoons lemon zest
  • 1 ½ cups Plain yogurt of choice
  • ⅔ cup milk

Directions:

  1. If using frozen berries try and thaw them out a bit before using. I blended each base one at a time in blender until there were no chunks left, should be very creamy. I then put them in large mason jars so I could keep them sealed in the refrigerator between pouring layers and allowing them to freeze.
  2. Start with the strawberry base and fill about 1/3 of your mold, tall thin molds work best for these layered popsicles. Let freeze for about an hour, I always touch the surface to make sure they are frozen enough that my next layer won’t combine with the first. Make sure to put your popsicle stick in when you pour the first layer or you will lose that layer when you pull them out.
  3. Once your first layer is frozen pour your lemon base on top, again filling roughly another 1/3 of mold and let freeze. Last, add the blueberry layer and freeze for several hours before serving.
  4. You may have some leftover of one base or another so you can just make them into their own popsicles as each of these layers are delicious on their own as well but combined together are especially yummy and so fun!!
