Cookie Dough Popsicles

The perfect combination of two of our favorite things: cookies and popsicles!

How can cookie dough be even more delicious? Turn it into a Cookie Dough popsicle! We are all huge fans of anything cookie dough in this house and so when I heard of a cookie dough popsicle recipe I just knew I had to make them! They were super easy to make and extremely tasty. Having the chocolate chips in them is yummy, but it also adds a nice texture to the popsicle as well.

The kids helped me make these, Libby put the chocolate chips in the mold for me. They could not wait to try these and as you can see they are one of Claire’s favorites. Claire has a huge sweet tooth for chocolate, I wonder where she got that from! One of Claire’s favorite treats is “Chocat Chips” so there was no way she could resist these popsicles. Libby loves these too, anything with cookies and chocolate, Libby is game for!

These popsicles are definitely a dessert or treat type of popsicle. They will definitely be on our list of popsicles that we make over and over again. I make popsicles every week, I try to make at least two different recipes. All week I love to search for different recipes on Pinterest, to help get my creative juices flowing.

Every morning when I bring Claire up from bed she says “Pop pop pop” and runs right over to the freezer. So now I am trying to find the perfect breakfast popsicle, I thought that would be a fun way for the kids to have breakfast. I am looking for something with yogurt or cereal in it and once I find one that I love, I will be sure to share it here with you all!

Ingredients:

  • 2 1/2 cups milk
  • 1/4 teaspoon salt
  • 2/3 cups Brown Sugar
  • 2 teaspoons Vanilla Extract
  • 1/4- 1/2 cup Semisweet Chocolate Chips or Mini Chocolate Chips

Directions:

  1. Place milk in microwave and heat for 1 minute, or until it is warm.
  2. Stir in the brown sugar and salt until it dissolves in the milk
  3. Stir in vanilla
  4. Place 1 tablespoon chocolate chips in the bottom of the popsicles molds. ( For the big molds I used regular size chocolate chips and the small molds used mini chips.)
  5. Fill to the top of molds with the milk mixture
  6. Insert sticks and freeze until solid ( at least 5 hours)
