Refreshing & delicious!
Strawberry lemonade is one of my absolute favorite summer treats! I make it about every other week all summer long. I couldn’t handle waiting any longer so I have already started to make it. The kids love it, I love it and it is such a special treat to have when our friends come over. It’s super refreshing and keeps you coming back for more. I knew once I started on my popsicle kick I had to make a strawberry lemonade popsicle!
The one thing I did differently was I added the pureed strawberries in the lemonade mixture. Normally I just add fresh cut strawberries, but we didn’t have any fresh strawberries. That’s why I substituted frozen strawberries and then pureed them and they turned out so amazing! It turned out so much better than our normal recipe for the strawberry lemonade. This is how I plan to make our strawberry lemonade from now on, I’m so happy I tried it this way!
These popsicles turned out super yummy and they are just a great popsicle for when you need a refresh. I got these dinosaur molds on Amazon, I wanted a special mold for Finny. He has really been getting into the popsicles and I just knew he would love these dinosaur molds. It was so fun getting to do a little photo shoot of him with his dinosaur jammies and dinosaur popsicle. I just love that something so little can show your kids that you love them and it just turns into such a special moment. Also they get to enjoy a special treat.
These strawberry lemonade popsicles were gone within a few days and I can’t wait to mix up another batch of them soon. We are going to be making these popsicles on repeat all summer long along with our normal strawberry lemonade. I plan to make a double batch here soon so we can have a tray of popsicles!
Ingredients:
- Boil 1 cup of water and 1 1/2 cup granulated sugar
- 2 cups fresh lemon juice (About 12 lemons)
- 6-7 cups cold water
- 4 or 5 Frozen Strawberries or more if you want a more strawberry taste
Directions:
- Thaw the frozen strawberries in a pot with a little bit of water, just enough to coat the bottom.
- Cut and juice about a dozen lemons, to make 2 cups of lemon juice. Fresh is best. Set aside.
- Boil water and sugar until the sugar has been thoroughly dissolved.
- Puree the strawberries, this really brings out the strawberry flavor. If you can’t puree them, try to squish them up some.
- Add everything to the boiled water and sugar mixture, stir everything together.
- Add mixture to your popsicle molds
- Freeze until hardened
- Enjoy!
