Here’s another one of our delicious recipes from the old blog. These are still a favorite, and we are making them for tomorrow’s Open House. Come sample some!
Peanut Butter Granola Balls- Martha Stewart
1/3 cup honey
1/4 cup natural peanut butter
2 Tbsp. unsalted butter
1 C. crisp rice cereal
1 C. old fashioned rolled oats
1/4 cup dried fruit (rasins/craisins)
In a small saucepan over medium, heat honey, peanut butter, and butter. Stir until loosened and smooth, 1 to 2 minutes. Remove from heat; stir in cereal, oats, and dried fruit.
Drop mixture by the tablespoon into mini paper cupcake or candy liners. Place on a rimmed baking sheet, and refrigerate until set, about 15 minutes. To store, refrigerate in an airtight container up to 1 week.
This recipe is great to make with kids. they can do all the stirring, and if is fun shaping the balls and placing them in cupcake papers. this is very simple to make and is a great snack for any age. They aren’t too chewey either! My mom, brother, and son all loved them, and I served them as a healthy snack at a recent ladies night at D-dots. You can get cute cupcake wrappers to put them in too! They are great for parties, and they look cute. I also made this recipe a little different by adding shredded coconut, craisins and sliced almonds.
