Who else has been doing more cooking and baking than ever?! We’ve been on the hunt for yummy new recipes that both the kids and Phil and I will enjoy and these Blueberry cottage cheese pancakes were a win all around!

We are always looking for ways to get lots of protein in the morning. It’s such a healthy way to start our days. Hood Cottage Cheese contains at least 10g of protein in each serving so that’s a win!

Cottage cheese is great with breakfast, as a snack or added to a recipe, with flavors from sweet to savory the possibilities are endless! I am blown away by how versatile it is! I’ve seen great recipes for snack, dinners, and of course we all know it’s delicious by itself.

This must be our new favorite pancake recipe. All the kids loved it and I’m sure we’ll be making it lot’s more in the future.
Pancakes with Hood Cottage Cheese Recipe
Ingredients:
- 8 oz Hood Cottage Cheese with Blueberry Flavor
- 8 oz milk
- 2 eggs
- 1/2 stick melted butter
- 1 tsp vanilla
- 8 oz melted butter
- 8 oz whole wheat flout
- 2 tbs sugar
- 2 tsp baking powder
- 1 tsp salt
Directions:
- Combine dry ingredients with a whisk in a medium bowl.
- Beat eggs in a medium/large bowl, and then beat in remaining wet ingredients.
- Gently incorporate the dry mixture into the rest, being careful not to over-mix. Some lumps are okay at this point!
- Add fresh or frozen blueberries if you have some and want to add extra moisture and fruit.
- Fry on a hot griddle until golden brown, and serve topped with more Hood Cottage Cheese with Blueberry Flavor!
