No bake cookies are one of my favorites! They’re filled Oats, chocolate and peanut butter, three of my favs and they’re so easy to make! They are also one of my family and friend’s favorites of all the things I make so everyone gets excited when they see I’ve made a fresh batch!
No bakes are such a versatile cookie, you can really add anything in them to make them your own! When I make these at home they are gone within days! They are definitely a crowd favorite and I love to see everyone enjoy them when I bake them! They store nicely in an airtight container and don’t tend to melt unless it gets really hot. These seem to even be fine at the one-week mark to still enjoy them!

Ingredients
- 2 cups sugar
- 1/2 cup cocoa
- 1 stick + 2Tbls butter
- 1/2 cup milk
- 1 cup peanut butter
- 1 tablespoon vanilla
- Dash of salt
- 3 cups oatmeal
- Parchment paper
Instructions
- In a heavy saucepan bring to a boil, the sugar, cocoa, butter and milk.
- Let boil for 1 minute (don’t boil for longer or they will be too dry)
- Remove from heat and add peanut butter, vanilla, salt and oatmeal.
- On a sheet of parchment paper, drop mixture by the teaspoonfuls, leave on parchment until cooled and hardened.
- Store in airtight container.
