Buttermints Recipe Will Make Your Mouth Water

Buttermints from “Brittles, Barks and Bon-bons” by Charity Ferreira

4 1/4-4 1/2 Cups Powdered Sugar
1/2 C. Room Temp. Unsalted Butter
1/4 C. Whipping Cream
1/8 teaspoon peppermint oil (use more if using peppermint extract)
gel food coloring

Beat together sugar, butter, cream and oil until well blended. The mixture will be stiff.  When it becomes too stiff to mix, turn onto a surface lightly covered in powdered sugar and kneed by hand, working in more sugar until the mixture is soft and smooth, but not sticky.

Divide into eight pieces. Cover other pieces with plastic wrap to prevent drying. Add a few drops of food coloring and kneed into dough until food coloring is distributed.  Roll each piece into a rope about ten inches long and 1/4 inch thick.  Cut the rope into 1/4 inch wide pieces and then cover with wax paper, and let stand until dry (about 8 hours) Refrigerate in airtight containers for up to one week.

The Result

These buttermints are so delicious, I know you will love them too!  I loved making them in fun colors like orange, pink, and light green.  They are a nice little snack for a sweet tooth without being a lot in each bite.  This recipe made quite a few, and they kept very well.  They were still very moist and pepperminty by the time we finished them. We are making some more this weekend for a bridal shower and are doing them in colors that coordinate with the shower!  You could do these buttermints for so many events and the possibilities are endless! You will never want to go back to the store bought buttermints after these tasty treats!
