S’mores Popsicles

Who doesn’t love smores on a warm summer night? I know I do! Smore’s just remind you of summer nights, bonfires, camping, and just being with family. I always loved making smores growing up and my kids share the same passion. How could you not love the ooey goodness of a warm marshmallow with melted chocolate and the sweet crunch of a graham cracker.

I wanted to bring that delicious flavor to a popsicle and they do not disappoint. These are perfect for those warm summer night when it’s too hot to make smores! These were everyone’s favorite popsicle, they have that sweet chocolate base, with bits of marshmallow and chocolate chips, and the graham cracker crust is so delicious!

These are so fun to make with the kids, they can add the chocolate chips in then you pour in the chocolate mixture. Then they can sprinkle the marshmallows and graham crackers on. It’s the perfect recipe to have a little helper join in on!

These are a very rich popsicle that is thick and creamy! These would be so fun for a camping theme party or to take camping with you! When we make these we make a huge batch of them because they go so quick! We store them in the air tight containers in the freezer so you can easily grab them and start eating!

Ingredients:

Smore Popsicle Base:

  • 1 cup of sugar
  • 1/2 teaspoon of salt
  • 2 Tablespoons cocoa powder
  • 2 Tablespoons cornstarch
  • 3 cups whole milk
  • 1 cup heavy whipping cream
  • 1 tsp vanilla extract

Add In’s:

  • Handful of mini Chocolate Chips
  • Handful of mini Marshmallows
  • About 1 cup of crushed Graham Crackers mixed with 3-4 tbsp. melted Butter

Directions:

  1. Add a few mini chocolate chips to the bottom of the popsicle molds.
  2. Combine cocoa powder, cornstarch, sugar, and salt in a pan and mix together well with a whisk.
  3. Add milk and whipping cream, stir on low to medium heat until everything is combined and it just starts bubbling.
  4. Immediately remove from the stove and add vanilla.
  5. Once slightly cooled pour into molds and fill about 3/4 of the way.
  6. Then sprinkle a layer of baby marshmallows.
  7. Combine your graham crackers and butter
  8. Then put your crushed graham cracker on top of your marshmallow layer.
  9. Put your popsicle stick in then freeze for 6 hours
  10. Enjoy!
