Almond Joy Popsicles

Coconut is one of my favorite things, I just love coconut everything! Coconut is one of those things where you love it or hate it. Phil is not a huge coconut lover and the kids don’t mind it, but Finn has acquired my love for coconut. I was so excited to try these because I love chocolate mixed with coconut and almond. This past summer we had someone make us an Almond Joy cupcake flavor and they were amazing. I thought somehow I need to make this happen in popsicle flavor.

These turned out really good and the great thing about them is you can make them with or without dairy. You can just use coconut and almond milk, also just use a dark chocolate that is dairy-free. So this is a great option if you are someone who doesn’t do dairy! It is such a refreshing popsicle with the coconut base of the popsicle and then you get that rich dark chocolate drizzle with coconut flakes. The flavors just work so well with each other and it turns out to be such a yummy popsicle.

Finn was the most excited to try these out so he got to be my taste tester. He was a big fan, but I think these are more of an adult popsicle. All the kids tried them and they liked them, but weren’t going back for seconds like I was. I would highly recommend if you have some girlfriends coming over or if you just want a sweet cold treat for yourself to make these.

These have stayed fresh really well in an air-tight container. I made them over a month ago and they are still so tasty and refreshing. We just have so may different popsicles in the freezer at the time that they tend to get stored longer. It is just such a yummy sweet taste and just the flavors of the almond, chocolate, and coconut complement one another so well and they are just to die for!

Ingredients:

  • 1 can 14oz Coconut Milk
  • 1 cup Milk ( Coconut or Almond)
  • 1/3 cup Maple Syrup or Honey
  • 1 tsp Almond Extract
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 1/3 cup Shredded Coconut (optional)
  • 1 cup Melted Chocolate ( I used semi-sweet chips and a dark chocolate bar)
  • 1/2 cup Sweetened Shredded Coconut for garnish

Directions:

  1. Combine coconut milk, milk of your choice, syrup, almond extract, vanilla extract, and salt. Mix well with whisk or blender. If you’d like add shredded coconut and stir before pouring into molds
  2. Pour into molds of choice and let freeze for at least 6 hours.
  3. Once frozen fully prepare the chocolate topping and coconut topping. I melted semi-sweet chocolate chips and a dark chocolate bar together but you could use any of your favorite melting chocolate. Melt chocolate in chocolate melter or microwave.
  4. Prepare a baking sheet with parchment paper on it that will fit in your freezer. Remove popsicles from molds and immediately drizzle with chocolate and sprinkle with coconut. You can use as much or as little chocolate or coconut per your taste
