Pink Peppermint Patties

I made these for the first time around Christmas and they were so cute and yummy I decided to make them for everyone’s Easter baskets this year. I love candy that you can make and wrap cute! I think I first stumbled across these on Pinterest which then led me to the fabulous Sweetapolita blog. I am now addicted to her blog as she is always creating fabulous treats that not only taste wonderful but look adorable too and she always does a great job photographing and presenting everything that just makes your mouth water! I love how these turned out and can’t wait to do them for all different events. I love the pink foil I found to wrap them in and will be keeping my eyes peeled for more fun colored foil. They are very easy to make but just a little time consuming. It is well worth it though. I hope you and your family will enjoy these if you get a chance to make them.

Peppermint Pattie Recipe

4 cups powdered sugar

3 tablespoons unsalted butter, softened

1/4 teaspoon peppermint oil

3/4 tsp pure vanilla extract

4 tablespoons evaporated milk

 

Start by mixing all of the above ingredients on low until well blended. Once combined turn mixer to high and mix for a few minutes until nice and creamy. Cover dough and place in refrigerator for about 30 minutes until stiff. Once chilled roll in small balls, flatten into patties and place back in the refrigerator. While they are chilling melt chocolate wafers in chocolate melter or over double boiler. Once melted add desired food coloring. Place a sheet of parchment paper on counter to place finished patties on. Take peppermint patties out of refrigerator and dip  in melted chocolate and then place on parchment paper to harden. Once hard serve patties or wrap in some cute foil to give as gifts.
