Candied Citrus Peels

Candied Citrus Peels- Martha Stewart
3 Grapefruits, 3 oranges or 4 Lemons
4 cups sugar
4 cups water
Using a knife make 6 slits along the curve from top to bottom of each fruit, cutting though peel but not into fruit.  Gently remove peel. Slice each peel into 1/4 inch wide strips. Remove extra white pith. Place strips in saucepan and cover with cold water. Bring to boil and drain (repeat twice)
Bring sugar and water to a boil. Add strips to boiling syrup and reduce heat to medium low.  Summer gently until strips are translucent, aobut 1 hour.  Remove from heat and let strips cool in syrup.
Transfer strips to a wire rack. Wipe off excess syrup with a paper towel, and roll strips in sugar.  Arrange on wire bakings sheet and let dry for 30 minutes.

These were a little bit tangy, but I dipped them in a little bit of melted chocolate and they were pretty good.  They are not something you want to eat a lot of, but it has a refreshing citrus taste.
