We went blueberry picking last week, and had a great time. Noah loved eating the berries as fast as he could pick them. When we got home with all the berries, I found all these great recipes and wanted to share them with you!
Blueberry Crumb Cake
Streusel Topping
1 Cup Flour
1/2 cup light brown sugar
1/4 teaspoon salt
1/2 cup butter
Cake
4 Tablespoons- softened
1 1/2 cups flour
1 1/2 teaspoons baking pwder
1/2 teaspoons baking soda
1/4 teaspoon salt
1/4 teaspoon allspice
3/4 cups sugar
1 large egg
2/3 cup low fat buttermilk
1 1/2 cup blueberries
Preheat oven to 350. Make streusel topping: In medium bowl, mix together flour brown sugar and salt. Cut in the butter until moist crumbs form. Chill
Butter and flour a 9 inch square baking pan. In a medium bowl, whisk together flour bakingpowder, baking soda, salt and allspice. In large bowl beat butter and sugar with mixer until fluffy. Add egg and beat well. Add flour mixture and buttermilk alterntively until combined. Batter will be very stiff. Fold berries into batter and spoon into prepaired pan.
Sprinkle cake with topping. Bake until golden brown 40-45 minutes. Dust with confectioners sugar before cutting into squares.
