Strawberries and Cream Popsicles

I was wanting to do something with strawberries and came across this recipe. Strawberries are a huge hit in our house, we go through them faster than any other fruit! Typically, we buy frozen strawberries in bulk because we use them for smoothies nearly every day. The original recipe for this called for fresh strawberries, but during this time it’s become difficult to get your hands on fresh fruit so instead, I improvised and used frozen strawberries. They turned out amazing with the frozen fruit, which is great since we always have frozen fruit on hand!

I love that these are low in sugar and one batch made a ton of popsicles. I can say yes to these whenever the kids want them, which is nice since most things I have to wait until they have had a meal and can eat after as a treat. They are healthy, they remind me of a smoothie popsicle so they are nice and refreshing. They have a little bit of sweetness to them and a fluffy texture to them, which is odd in a popsicle but it’s honestly so good and the kids love them!

Another reason I love them is they are PINK! Who doesn’t love a pink popsicle? I did make these in small popsicle molds and large popsicle molds. The smaller ones I allow the kids to eat just about whenever they want, so they are extremely convenient and great portion-sized! The kids can just go to the freezer pull them out themselves and have them whenever they would like!

Ingredients:

  • 2 Cups Frozen Strawberries
  • 3 Tablespoons Water
  • 3 Tablespoons Sugar
  • 1 Cup Heavy Whipping Cream
  • 1 Teaspoon Vanilla

Directions:

  1. Combine frozen strawberries, water, and sugar in a pot and cook on low to medium until strawberries have softened.
  2. Let strawberry mixture cool, once cooled pure the mixture.
  3. Beat heavy cream and vanilla until a very soft whip cream forms (don’t overbeat, it should not be too liquidy, but also not too thick or it will be difficult to put in popsicle molds.)
  4. Fold strawberry pure into your whipped cream and scoop or pour into popsicle molds. This does end up being thicker then most popsicles so I had to use a spoon and then tapped my popsicle molds on the counter to get the mixture to go all the way into the molds.
